Feta cheese is one of my great loves – I love the salty sharp bite that is has, the creaminess, and the versatility. Pair that with Shrimp… and it’s heaven in my mouth. These Shrimp and Feta Canapés are a tasty appetizer that will please any crowd.
At least a decade ago, my grandmother made a variation of this, and I’ve been hooked ever since. I always look forward to it, and this is a “pantry essentials” recipe for me, if we broaden pantry to include the fridge and freezer – as I always have feta and shrimp on hand. I choose to call these canapés because we all need a little luxury in our lives from time to time, so why not start with our food. Plus… I couldn’t really think of anything else, as I usually refer to them as “the shrimp and feta things”.
In food blogger confession – I almost didn’t post this recipe because I was so disappointed in how the pictures turned out. I realized that while they are very flavorful, they are rather beige. And beige on a tortilla… well, that’s just dull. HOWEVER! My desire to get the recipe out there for you to enjoy prevailed and I hope you trust me that it tastes 100 times better than it looks.
This is so simple to throw together! I usually always use tortillas for this, as I always have them on hand, but you can also use pita or naan. I’ve used both in the past and enjoyed it just as much. I’ve even used this mixture to make quesadillas that were delicious.
While you are cooking the shrimp in garlic and butter, thus making your house smell AMAZING, mix together your other ingredients. I used orange zest because that’s what I had on hand but use orange and lemon interchangeably.
Once they have cooked, cut your shrimp into pieces and fold into the cheese mixture. Next, you want to cut your tortillas into 6ths and place on a baking sheet. I like to spray them with cooking spray to get extra crispy. Then top them with the shrimp and feta.
Bake at 375 for approximately 10 minutes or until your tortilla is crisp and cheese is melted. It’s really important you watch these closely! Cook time is entirely dependent on your oven and these babies go from almost to DONE in seconds.
- 1/2 c. Feta Cheese, crumbled
- 1/4 c. sour cream
- 1/2 tsp oregano
- Ground Pepper to taste
- 1/8 tsp orange zest
- 3 cloves garlic, minced
- 1 tbsp butter
- 10 medium shrimp
- 4 tortillas
- Preheat oven to 375.
- In small skillet, melt butter and add garlic and shrimp.
- When the shrimp is finished, allow to cool.
- Combine feta, sour cream, oregano, pepper, and zest.
- Cut shrimp into pieces and fold into the cheese.
- Cut tortillas into 6th and place on a baking sheet. Spray with cooking spray.
- Top tortillas with shrimp and feta mixture.
- Bake at 375 for approximately 10 minutes or until tortillas are crisp and cheese is melted.
