Prosciutto Wrapped Asparagus

Sometimes, we don’t always get to do “date night” in the way we want. Time runs short, babysitters can be hard to come by, and sometimes the budget may be more dollar menu than fine dining. And even if the stars align, sometimes a night at home with your honey, a movie, and the couch are just what you want. And easy to eat snacks can be the perfect food to celebrate a date night at home – but that doesn’t mean the snacks have to be typical fare. Prosciutto Wrapped Asparagus is perfect date night food – it looks fancy, tastes great, and is a bit more special than cheese on a cracker.

I love to use my toaster oven for these beauties, so I go ahead and get that preheating at 400 degrees.

I like to use medium sized asparagus for this. You don’t want the tiny little stems because it needs to support the prosciutto. 

I use half a slice of prosciutto for each stem of asparagus.

Start at the bottom and just roll it up the stem.

I put these on the little toaster oven tray (covered in foil for easy cleanup).

I cook these on 400 degrees for about 10 minutes to cook the asparagus a bit, and then switch to the broiler to crisp the prosciutto. Keep your eye on this closely when you switch to broil. The time is completely dependent on the prosciutto. Take them out when it is browned and crisp.
