Parsley Potatoes

I promised you potatoes yesterday, and potatoes you shall have! These Parsley Potatoes are one of my absolute favorite ways to cook potatoes, for two reasons. 1 – They are crispy and delicious and 2 – they go with ANYTHING! And a bonus – they look beautiful. 


Those are some good looking taters! Did I mention they have bacon? 


Cut 3 slices of bacon into pieces, and cook in a large skillet until done. 


While your bacon is cooking, toss your potatoes in the microwave for about 10 minutes. I use these small golden potatoes, but any small potato will work nicely – fingerling, red potatoes, etc. 


Remove your bacon from the pan when done. Try to keep from eating it off the plate because you’ll use it later. 



I halve my potatoes and then toss them in the skillet we just cooked the bacon in. 


Once your potatoes are nice and brown, add in your chopped parsley. 


Add in 1 tsp of salt, pepper, and 1 tsp paprika. Toss. Then add in 1/4 c of grated parmesan cheese and crumble that bacon you cooked on top. 


Remember these beauties? I love to top them with a little bit of sour cream, but they are delicious as they are.
