I love breakfast food, always have. What I don’t like about breakfast food is it taking a long time to make or having to be standing in the kitchen cooking while everyone else is relaxing with coffee (or juice) watching TV on the couch. This casserole is the perfect solution. It whips together in minutes, feeds a crowd, is kid friendly, and tastes great!
I apologize in advance for the crappy picture quality here… someone forgot to charge her camera battery, but I wanted to still get you the recipe, so I had to use my phone for these.
One of the things I love about this is the versatility… you can use any meat you’d like, any cheese you like, and any toppings you’d like and it will still come out tasting amazing.
Pickle and Joe love sausage, and sausage is what I use most frequently for this – I prefer bacon, but sausage does give this more flavor.
Start by browning a package of breakfast sausage in a skillet.
Then add to a greased 13×9 casserole dish.
Next you need 2 cups of Bisquick (or your favorite substitute).
Add 4 eggs.
Add salt, pepper, and dill weed.
Whisk in 2 cups of milk.
Back to your dish, add toppings to your breakfast meat. Pickle prefers no veggies in hers, but Joe and I opted for onions, mushrooms, and grape tomatoes.
Top this with 1 cup of shredded cheese. I used cheddar.
Pour the batter over the mixture.
Bake in a 375 degree oven for approximately 30 minutes or until golden brown.
Then eat it. Noms.
