Cucumber, Onion, & Tomato Salad

There are some foods that have been a part of your life for so long, that you don’t even have a real recipe for them. They just come together with muscle memory – as if your hands know exactly what to toss in to come out with the perfect combination. This, is one of those for me. My family ate cucumbers & onions as a side dish all through the summer – it’s a perfect no cook side on hot days, and is great to take to picnics as there is no mayonnaise to spoil. As I have gotten older (and married a tomato obsessed husband), I have grown to like tomatoes added in to mine. I am also a bit of a purist, in that I like to use apple cider vinegar alone and don’t add any sugar. 

I hesitate to even call this much of a recipe, but thought I would share one of our summer favorites with you. 



Don’t worry about perfectly peeling your cucumbers. A little bit of green makes it look pretty. 


A thin slice is really the best here, just do the best you can. This is supposed to be a simple recipe, don’t break out the mandolin slicer or anything. 


Cucumbers love salt and pepper. I add liberally.

  1. 2 cucumbers, peeled and sliced thinly
  2. 1 onion, sliced thinly
  3. 1 tomato, sliced thinly and halved or quartered depending on size
  4. 1/2 cup Apple Cider Vinegar
  5. 1 tsp fresh dill, chopped
  6. Salt & Pepper
  1. Mix all the ingredients together in large bowl.
  2. Let sit in the refrigerator until cold.
  3. Enjoy!
